EDIT: Apparently solved! The librarians did become jobless, but it took a while. Apparently the change is not immediate. I assume that the villager only notices that the workstation is gone when it is time for him to visit it. :-) You used to be able to reset a villager's profession if you broke his workstation before trading with him.
